Which pallet type is actually best for food storage?

I'm setting up a small food processing unit in Dubai and I'm getting conflicting advice from different suppliers about which pallets to use for storing our ingredients and finished products. Some are pushing wooden pallets as cheaper, others are saying plastic is the only way to go for hygiene reasons, and honestly I'm a bit overwhelmed by all the options out there. We'll be storing things like flour, spices, and packaged goods, and I need something that won't absorb moisture or harbour bacteria because the health inspectors here are pretty strict about that sort of thing. I've been looking at various plastic options and I'm leaning towards the ones that are completely flat on top because they seem easier to clean and better for stacked bags, but I'm not sure which specific design works best in practice. For our application, flat top plastic pallets seem like the obvious choice because they prevent bags from sagging between the slats and they're way more sanitary than wood, but I'm curious about the weight capacity differences between the 3-runner and 5-runner designs . Has anyone here set up a similar operation and can share what actually worked for them in the long run?
